When I was growing up. My favourite time to spend with family was on a Sunday morning. We’d all sit around the table and mum would make a giant plate of toast for us all and there would be jars of jam, cheese, eggs etc. all around to choose topping for our toast.

Everyone eating passing things around and chomping on our toast, talking about what plans we had for the day. It seems a little basic now. However, we didn’t sit around the table often. It was the only time my sister and I could be corralled to sit together without arguing.
I loved those mornings and now that my sister has sadly passed, id give anything to have one more with my family all together. 
So, when I had my own family I had to have that feeling with my own kids. Now Sunday mornings are pancake mornings.
My husband makes a giant plate of American style pancakes or waffles and we have them with maple, jam, fruit, bacon, chocolate spread and any other seasonal additions. The kids love it.

 My biggest tip ever is give kids choice.

If you don’t know if they’ll eat something go buffet style.. they’ll pick and choose munch and crunch everything in sight as they don’t realise how much they’re eating.
Put it on one plate and my 5 year old,  instantly starts to negotiate how much she HAS to eat, but let her go at a buffet and she eats more than I do.

How to make the best pancakes ever (in my opinion)

A relaxing weekend morning is a fabulous time to kick back and enjoy time together so I’ve pulled together 11 of our favourites that we rotate throughout the year.

My 11 and 6-year-old love help to make these pancakes. They are great at measuring, mixing, and flipping. My husband just has to put the dollops of mix in the pan. If my 6-year-old did this we’d have pancakes the size of dinner plates.

Our pancake recipe and method:-
260ml milk
6 Tablespoons melted butter or oil
2 beaten eggs
270g Self Raising Flour
2 teaspoons of baking powder
2 teaspoons of caster sugar(optional)

  • In a jug measure the milk, the melted butter and 2 beaten eggs. Whisk this together.
  • In a bowl, weigh out the self-raising flour and the baking powder. And 2 tablespoons of caster sugar if using, I don’t normally bother as our toppings are sweet enough.
  • Slowly pour the wet jug into the flour mix whilst whisking together until its smooth thick and bubbles appear on the surface.
  • Heat a flat pan till it’s really hot. If it’s properly hot you wont need any oil in a non stick pan but if your unsure dab a little oil or butter onto some kitchen paper, lightly spread it across the hot pan very carefully.
  • Dollop 3 of 4 spots of the mix into the hot pan and smooth out with the back of a ladle. They take a couple of minutes each side. Just wait till bubbles appear all over before turning them over.
  • We also use this mix with our waffle iron. Cooks Professional – Electric Belgian Waffle Maker Machine 180° Rotating – 920 Watts. (Cream)It’s a brilliant machine, easy to use and easy to clean. Just use half a ladle of mix per each waffle square and wait till cooked. You may have to add a little extra milk to the recipe above. Granola

Granola is a wonderfully moreish.. It’ll go with yoghurt, or have it with milk for a normal cereal. You can snack on it through the day too. So easy to make and so versatile. This recipe is the one we love but you can add pretty much anything.

An easy recipe from joyofkosher.com. a bit of fun for the kids.

Banana Smoothie
A wonderful thick smoothy full of goodness that will give you lots of energy and fill your tummy till lunch. This one is so easy and quick.

Banana Bread.
A regular staple in our house with this recipe. Warm for breakfast of with fruit for a wonderful healthy snack. It freezes well too. Yum

Courgette Bread.
This is the recipe here. I love it toasted in my flat-iron with a little salted butter on it. If we’re really hungry its great with a poached egg on top too. The kids LOVE it as a ‘ sunshine’ cake with lemon icing.(But they don’t like courgette shhhh)

French Toast With Fruit.
This is a good one. Delicious with something salty, a dollop of Ketchup or a sprinkle of sugar and fruit. Delicious!

Bagel And Scrambled Egg.
So delicious and easy. you can add things to it like smoked salmon but it’s just as good on it’s own.
Fruit Salad And Yogurt.
 Again, very easy but so delicious, you could add alittle honey or maple for a sweet hit but i love the tang of natural yogurt with the sweet berries. Top with granola if you need a crunch too.

    1. Hi Samantha. Give it a go! These recipes are so easy my kids can make most of them on their own. Give them a go. The taste far out weighs the skills required. If you invest in a waffle maker then the machine does all the cooking and the light comes on when the waffles are done so you done even need to stand over it.ive put a link to my waffle machine in the poat if you need a recommendation.   4. It was so surreal to scroll through your post because it looks as if our families have the same favorites list, exactly! Berries/granola/plain Greek yogurt is what I eat most mornings, or else cooked oatmeal (that is the only one I did NOT see here!) – and my girls love pancakes or waffles or French toast on the weekends! 🙂

  5. Yum!! Great breakfast idea!! I am a blessed mom and my kids eat what I put in front of them, If I was to give the choices I would never leave my kitchen lol. Their favorite is a dutch baby pancake with mixed fruit toppings.

    I love all of those choices! The egg in toast seems like such a healthy and fun way to serve breakfast. I’m going to try that one tomorrow morning. I get into a rut when it comes to cooking, so I’m always looking for unique and fun ways to serve food to my kids. So many great ones here.
